The Kubara Honke Group will open a new flagship store for Kayanoya, a brand developed by Kubara Honke Co., Ltd. Designed under the supervision of leading Japanese architect Kengo Kuma, this flagship store will promote the appeal of Japan's dashi culture both domestically and internationally, and will offer carefully selected dashi ingredients and high-quality gift items that are only available at Kayanoya stores nationwide.

1st floor: A dedicated corner for dried foods from all over the country

The first floor embodies Kayanoya's commitment to ingredients, and in addition to its mainstay dashi products, the store will offer over 20 types of dried goods, the core of the store, available individually. The store offers a selection of products that allow you to experience Japanese food culture, including bonito flakes, kelp, charcoal-grilled flying fish, and dried flying fish, all carefully selected by Kayanoya from all over Japan.
We also offer five varieties of "Kayanoya Selected Ingredients Dried Food Kits" (Tokyo, Nagoya, Noto, Kyoto, Hakata), which combine regionally distinctive dried ingredients. We also offer recipes for regional cuisine. Experience Japan's rich dashi culture in the comfort of your own home.
We also have a wide range of other items available, including "Special Kayanoya Dashi" and "Dashi Chazuke Eel," which are only available at the Ginza store.

2nd floor: Dashi-inari, a gift exclusive to Ginza, Tokyo

The second floor, where you can enjoy leisurely shopping, offers a selection of carefully selected gift items. In addition to "Special Order Miyabi Dashi" and "Special Order Sansho Nama Shichimi," we also offer special items that can only be found here, such as special Kayanoya cookies from Régis d., a renowned French pastry shop in Ichijoji, Kyoto. We will also be selling "Tokyo Ginza Kayanoya Limited Edition Dashi Inari" as a souvenir.
Furthermore, the store will also offer beautiful tools related to Japanese food, as well as a gallery, providing a cultural experience.

The store was designed by architect Kengo Kuma, who has also worked on the National Stadium.
The warm exterior, with its cedar lattice eaves reminiscent of a thatched roof, will breathe new life into the Ginza streetscape.

Born in 1954. Founded Kengo Kuma & Associates in 1990. After serving as a professor at Keio University and the University of Tokyo, he is currently a distinguished professor and professor emeritus at the University of Tokyo and a member of the Japan Art Academy. He has projects underway in over 50 countries. He proposes architecture that opens up new relationships between nature, technology, and humans. "Oryori Kayanoya" is a restaurant that connects the Japanese culture from Kyushu to the future.

While Kayanoya Dashi has become known throughout the country, what is surprisingly little known is that its roots lie in one restaurant. Kayanoya opened in 2005, deep in the countryside of Fukuoka's Hisayama Town. Here, chefs use local, seasonal ingredients to create dishes that cherish the natural flavors of the ingredients, as well as dishes that incorporate traditional wisdom. This is the brand's headquarters, embodying Kayanoya's vision of "passing on Japanese culture rooted in the local community to the future."

A spectacular thatched roof, one of the largest in western Japan

Just under an hour from central Fukuoka, a drive through the lush countryside brings to mind a magnificent thatched-roof building reminiscent of a Japanese folktale. Said to be the largest in western Japan, this impressive thatched roof was handcrafted by artisans from around the country, primarily from Hita, Oita. The desire to preserve the traditional techniques passed down through the generations for the future is also the driving force behind the creation of this place. In 2025, 20 years after opening, the roof was completely re-thatched for the first time.
