In "Patisserie Parola", we have collaborated with the well-established French butter brand BORDIER. We sell canelé with plenty of Boldie butter.

The French chef Patissier ALEXIS PAROLA, who has been active as the general pastry chef of our company, has been appointed as the chef. Based on the popularity and ability of the desserts offered at the restaurant, we will name ourselves as the restaurant name and offer the domestic fruits carefully selected by Alexis Chef as parfaits and shortcakes as plate desserts that can only be tasted inside the restaurant.

This collaboration was made possible because the first head of Bordie Butter was a close friend of Alexi's father, who lives in France. In addition, we also accept advance reservations for your visit.

■ About the career of the chef

ALEXIS PAROLA

Born in Pornick (Brittany) in Nantes, France. In France, he gained experience as a pastry chef in Paris and Nantes, and in Alsace he worked as a chef pastry chef at the hot pot brand Staub's brand restaurant Le Theater. In Berlin and Scotland, he works as a chef (cooking) and pastry chef (confectionery).

He came to Japan in 2016. Launched Kagurazaka's bistro "Le Moccot", and in 2018, engaged in "TEPPANYAKI 10" as a pastry chef of Ten Stars Dining Co., Ltd. This time, he will start a new challenge as a chef pastry chef of "Patisserie Parola".

<About Boldie Butter>

A long-established butter brand made in Brittany, the hometown of Alexi Palora Chef. It is made using only the fresh milk of dairy cows raised on the mineral-rich pastures of the Normandy region from the rich land of Brittany. It features a smooth mouthfeel and a rich aroma.

<About fresh cream of glass fed>

Uses "Glass Fed Milk Fresh Cream" from Happiness Ranch in Iwate Prefecture. In the wilderness without a barn, we will respect the lives of the cows and ask them to watch over and share their "happiness". That is "Glass Fed Milk" from Happiness Ranch.
