Minimal’s patisserie opens its first store at Ginza Mitsukoshi. The chef will personally bake the limited-edition new product “Arhuaco Chocolate Financier” at the venue, as well as the signature bread “Minimal “The Day”” will be on sale from June 5th.

Minimal – Bean to Bar Chocolate -, a Japanese specialty chocolate store developed by βace Inc., will hold its first pop-up at Patisserie Minimal Soshigaya Okura, a chocolate patisserie that opened in 2023, for a limited time from Wednesday, June 5th to Tuesday, June 11th, 2024 at Ginza Mitsukoshi in Tokyo.

Patisserie Minimal Soshigaya Okura is a chocolate patisserie run by the specialty chocolate brand Minimal, which expresses the charm of cacao through baked goods, cakes, and assiette desserts.

At this first-ever POP UP, our chefs will be baking exclusive baked goods on the spot that are usually only available at Patisserie Minimal Soshigaya Okura.

In addition to the popular chocolate financiers and galettes, we will also be selling the "Arhuaco Chocolate Financier," a new product available only at this event, made with gold medal-winning chocolate that won second place in the world, and the signature chocolate bread, "Minimal "The DAY"."

This new product is available exclusively at this POP UP: a popular financier from "Patisserie Minimal Soshigaya Okura" topped with "Arhuaco" chocolate, which won a gold medal (overall winner in Asia and second place in the world) at an international chocolate competition.

"'Arhuaco" is a single-origin chocolate made using only rare cocoa beans from the Arhuaco people of Colombia, and features a cacao-derived fruity flavor similar to grape jam.
It has received numerous awards, including the gold medal in the Rough ground Plain/Origin bars category at the 2019 International Chocolate Awards (ICA) World Championships, the overall championship at the 2023 Asian Championships, and second place in the world in the same year, and its taste is recognized worldwide.

Chef Okuno of Patisserie Minimal Soshigaya-Okura is a former baker. Combining his experience as a baker with his experience at Minimal, he has created a one-of-a-kind chocolate cream bread that pursues the perfect combination of chocolate and bread. A rich and plump chocolate custard cream is wrapped in brioche dough, which is then filled with another type of chocolate custard cream with a different texture, creating a two-layered treat.

The product name "The Day" means "the best day," and is intended to convey the hope that "eating this bread will make your day the best it can be."

From Chef Okuno

This will be the first time that "Patisserie Minimal Soshigaya Okura" will open a store at the event. We plan to offer many products that can usually only be eaten at the store. We will also have a limited edition product specially prepared for this occasion: financiers topped with Al Aco, a chocolate that won second place in the world at an international chocolate contest.
I think that many customers will be learning about Minimal for the first time, so I hope that more people will enjoy it. I will also be at the event baking the products, so I am looking forward to meeting customers in person.

This new product is only available at this POP UP and is made by drizzling "Arhuaco" chocolate, which won a gold medal at an international chocolate competition (won the Asian championship and second in the world), on the popular financiers from "Patisserie Minimal Soshigaya Okura."

・Chocolate Financier/370 yen

We used a lot of chocolate to ensure that you can fully enjoy the rich flavor of cacao. The aroma spreads even more when you bite into the chocolate chips.

・Financier/350 yen

Precisely because it is simple, we pursued a balance between the aroma of butter and the flavors of almonds and honey, aiming for a taste that you will want to eat again and again on a daily basis.

・Pulp Financier/370 yen

We squeezed cacao pulp jam onto plain financiers. Please enjoy the combination of the buttery financiers and the sweet and sour cacao pulp.

・Minimal “The DAY” / 440 yen

This two-layered chocolate cream bun is the product of Chef Okuno's experience as a former baker. Rich, dense chocolate custard cream is wrapped in brioche dough, which is then filled with another type of thick, gooey chocolate custard cream with a different texture, creating a two-layered bun.

・Gâteau Basque Chocolate/450 yen

A generous amount of dark chocolate ganache is sandwiched between crunchy galette dough and baked. Enjoy the rich taste and aroma of chocolate, as well as the crunchy texture.

・Galette Bretonne/420 yen

We strive to achieve a perfect balance between the crispy texture and the crumbly texture, the buttery flavor, and the sweet aroma of rum. For the special flavoring, we use "Flor de Caña," a rum from Nicaragua, Central America.

・Chocolate sandwich cookie/2,160 yen

Chocolate that expresses the unique flavors of nuts, fruits, and cacao is sandwiched between crispy cookies. Even first-time customers can easily see the difference in the taste of the cacao, and the individually wrapped cookies make them perfect gifts.

・Chocolate Langue de Chat/3,240 yen

This cookie tin is filled with 27 langue de chat cookies made with single-origin chocolate made from cocoa beans from Ghana.
After careful consideration of the compatibility between langue de chat and chocolate, we created this original chocolate starting from cacao beans.

・Almond chocolate/1,320 yen

Among Minimal's chocolates, this one has a high cocoa concentration of 80%. The sweetness of the almonds and the bitterness of the chocolate combine with each bite to create a satisfying, aromatic treat.
With an exquisite balance of the sweetness of almonds and the pleasant bitterness of chocolate, it can be enjoyed in a wide range of situations, such as as a snack or as an accompaniment to alcoholic drinks.

At Minimal, artisans visit cacao-producing regions around the world and handcraft each chocolate from high-quality cacao beans.
