Kyoto sweets you should try now
Although Kyoto City may have a strong image of being "Japanese," in fact, it is a battleground for bread, with the highest bread consumption in the country, and is also full of highly sensitive "Western" food culture. Kyoto, where long-established and up-and-coming businesses compete fiercely, has a wide range of "must-eats" from world-renowned talent to new and innovative sweets.
Chef Shinichi Sugita will be visiting on September 18th (Wed) and 19th (Thu)
Representing Japan at Coupe du Monde de la Patisserie 2015 (World Pastry Chef Championship), he placed second in the world. He is the fifth generation owner of the Sugitora Fruit Shop, which opened in Kawaramachi Sanjo after 100 years and closed in 2008. In 2017, he revived it as a gelato shop called SUGiTORA, and currently has three stores in Kyoto.
Owner Junichi Yamaguchi will be present from September 18th (Wed) to September 23rd (Mon, substitute holiday)
He won the Latte Art World Championship in 2014 and went independent in 2019. At his two cafes in Kyoto, he provides coffee and canelés that are delicious for both coffee lovers and those who don't like coffee, with a focus on selecting the green beans, roasting, and brewing.
Owner Takeshi Kondo will be present: September 18th (Wed) – September 23rd (Mon, substitute holiday)
He is the fourth generation owner of Torokuya, a sweet azuki bean shop founded in 1926. After studying microorganisms in graduate school, he joined the family business. In 2022, he opened SHUKA, an old and new seed confectionery brand that is an evolution of sweet azuki bean. He creates confections that make use of the individuality of seeds, treating not only domestic beans but also nuts from overseas as seeds, based on the concept of "enjoying seeds". In 2023, he will launch "SHUKA gelato," a new type of plant-based gelato made from seeds.

The inherited skills of Kyoto that we want now
Soryugama is a husband and wife pottery production company run by artisans who have inherited the traditional techniques of Kyoto's Kiyomizu-yaki and Fukuoka's Oishiwara-yaki, and who have combined their skills to create a deep blue color. The deep blue color is created by applying glaze to celadon porcelain with pigments kneaded into the clay. The pottery is characterized by regular patterns that emerge in blue, incorporating the Oishiwara-yaki technique of "Tobikanna." While exploring new worlds of celadon, they create a wide range of tea ceremony utensils, tableware, jewelry, and more, all of which combine beauty and functionality.
Founded over 100 years ago, Saga Raden Nomura is a craftsman with a store in Saga-Arashiyama, Kyoto. Using carefully selected materials and technical skills, he carefully crafts each piece over a period of about three months, going through 60 to 100 steps from undercoating to decoration. He posts daily on his social media about the bewitching and delicate beauty of Raden.
Cherishing the softness and warmth of unglazed clay, he creates a variety of dolls, from Hina dolls and May dolls to modern dolls. He has received the title of Contemporary Master Craftsman (Award for Outstanding Craftsmen) and Kyoto Master Craftsman (Award for Outstanding Technicians in Kyoto Prefecture Traditional Industries) and has received numerous awards at the Kyoto Ceramic Doll Association Exhibition, including the Kyoto Prefectural Governor's Award in 2021, the Kyoto Chamber of Commerce and Industry Chairman's Award in 2022, and the Kyoto City Mayor's Award in 2023. He also serves as a director of the Kyoto Ceramic Doll Crafts Cooperative Association, and is committed to promoting the prosperity of Kyoto ceramic dolls.
