Sfida Fabbrica , the company behind the innovative cuisine restaurant quinto / trace , is opening a new restaurant in Ginza that will serve a never-before-seen version of "Kyoto Yakiniku."
In a dignified space where soft lighting and the warmth of wood harmonize, our chefs will prepare the rare Murasawa beef, of which only 80 head are available each year, cooked to perfection.
Enjoy nine types of Kyoto obanzai dishes, and escape the hustle and bustle of Ginza to enjoy a moment of leisurely food.

We purchase 80 head of legendary Murasawa beef per year directly from the prestigious Ginkakuji Onishi in Kyoto.
The supplier is Ginkakuji Onishi, a long-established butcher shop with its main store in Kyoto.
Wagyu beef is selected by highly discerning chefs according to strict standards and has been trusted for many years by Kyoto's most renowned and star-ranked restaurants.
Among them, only around 80 head of "Murazawa Beef" are sold on the market each year.
・Producers are raising an extremely small number of cattle. ・Shipping standards are strict, so only a limited number of cattle are certified. ・Most of the cattle are given priority for wholesale to famous restaurants in Kyoto. For these reasons, it is so rare that it can be called a "miracle" that restaurants are able to handle this beef.
With the cooperation of Ginkakuji Onishi, our restaurant will be one of the few restaurants that can serve this "mythical beef" as yakiniku.
