Aging Beef Co., Ltd., a subsidiary of Belluna Co., Ltd., will open a new high-end yakiniku restaurant specializing in aged meat, "Aged Kappo Ginza Yazaemon," on Thursday, January 15, 2026.

As a pioneering Japanese black beef aged meat specialty store, our company has been honing its techniques since its founding, centering on meat aging, and has made it its strength to maximize the inherent flavor of the ingredients. In recent years, the restaurant market has seen a growing trend toward placing more importance on "the techniques used and the experience provided" than price or volume, and particularly in high-end areas like Ginza, we are moving toward an era where "experiential value backed by solid techniques" is preferred. In light of this market background, we have developed a new business model called "aged kappo" (Japanese cuisine) as a new challenge, expanding the scope of our aging techniques beyond meat to include fish and vegetables.

The core of "Jukusei Kappo Ginza Yazaemon" is to express the essence of aging in the context of Kappo cuisine. Applying the knowledge cultivated through the aging of Japanese Black Beef, we age meat, fish, and vegetables from carefully selected regions to suit their respective characteristics. * Our chefs carefully prepare each dish at the counter kitchen, determining the conditions that bring out the most flavor. The lively atmosphere, including the sound of cooking, the rising aroma, and even the gestures of plating, elevates the meal from just "tasting" to "experiencing." *Excluding some menu items.

Another feature of this restaurant is that it values the dignity of Kappo cuisine while also striving for ease of use without being too formal.
