・What is “Ginza Yamashina Hanare”?
We offer a completely private yakiniku restaurant based on Ginza Yamashina's yakiniku course, but with added elements of Japanese cuisine.
A dedicated griller is stationed in each private room, and the griller performs the optimal pasteurization according to the cut, thickness, and seasoning of each piece of meat. Customers can enjoy meat grilled to the best condition while enjoying conversation with their loved ones.
The signature menu item, “Katsu Sando,'' is a rare cut of chateaubriand that is cooked at a low temperature and then quickly fried in a thin batter to bring out the flavor of the meat. Sandwiched with bread that is crispy on the outside and soft on the inside. The product is so soft that you can chew it with your lips.
・Enjoy "ultra-long-term fattened beef" that takes time and effort to produce together with producers.
“Ginza Yamashina Hanare'' is located in the back of Yamashina, the main “Teppanyaki'' restaurant, and the main beef they serve is “Omi Beef'', a branded beef from Shiga Prefecture. Among these, cows are generally fattened for 24 months before being shipped, but we work together with producers to carefully raise them for over 40 months through “ultra-long-term fattening,'' which allows them to undergo biological aging (=ripening in a living state). By sharing the ingredients with teppanyaki, we have made it possible to serve “ripe Omi beef'' in yakiniku as well. You can enjoy special Yakiniku with strong flavor and crisp fat.
