Fonda Mexicana New York, which has three locations in New York and is the first to open in Japan, is a fine dining restaurant where you can experience authentic New York-style Mexican cuisine that is loved by sophisticated New Yorkers. You can enjoy a variety of authentic Mexican cuisine made by award-winning star chefs in a sophisticated New York-style space.
Umeno, CEO of Joe's Shanghai Japan Co., Ltd., who has a track record of securing the world's first licensing agreement for the hugely popular Chinese restaurant "Joe's Shanghai," beloved by many food-conscious New Yorkers and celebrities, is opening "Fonda Mexicana New York" in Tokyo for the first time in Japan so that people in Japan can enjoy the authentic Mexican cuisine and friendly yet sophisticated dining culture that he experienced in New York.
The restaurant serves authentic, modern New York-style Mexican cuisine. The chef is Roberto Santibanez, owner and chef of the Mexican restaurant "FONDA," which has three locations in Manhattan and Brooklyn. His Mexican cuisine, which is modern yet respectful of tradition and essence, continues to attract fans and is extremely popular as one of the top celebrity chefs in the United States.

The store design was created by designer Junpei Yamagiwa, whose work includes Peter Luger Steakhouse in Ebisu, Lawry's The Prime Rib in Ebisu, Obica Mozzarella Bar, CROWN French Restaurant – Palace Hotel Tokyo, and Dusit Thani Kyoto.
On this occasion, Yamagiwa accompanied Umeno to FONDA in New York, where he absorbed the essence of all three restaurants. After exchanging opinions with Chef Roberto, he responded to Umeno's strong request to sprinkle the DNA of the New York restaurants in a beautiful way throughout the restaurant.
The completed interior design is a departure from existing Mexican restaurants, with chic greige and beige tones, creating a stylish and lively fine dining restaurant that is unique to New York, full of originality never seen anywhere else. The sofas are accented with cushions in the two-tone red and pastel pink colors that are the symbolic colors of the main store.

Takanori Umeno
In 1987, he moved to New York and enrolled in the Manhattan School of Music. In 1988, he signed an exclusive contract with Look & Company, which was selected as one of the top five music production companies in the United States by Adweek magazine, and began composing and producing commercials across the United States. In 1990, he won the CLIO Awards Best Scoring Award, the advertising industry's equivalent of the Grammy Award, for the music in a TV commercial for Northwest Airlines. As a composer and producer, he has produced music for TV commercials for AT&T, Coca-Cola, Disney, and other companies, as well as music for Japanese and American artists such as Jessica Simpson, Hall and Oates, Maki Ohguro, and ZARD. He was unable to forget the deliciousness of the Joe's Shanghai that he frequented while living in New York, and succeeded in obtaining the licensing rights, which was said to be very difficult. He opened his first store in Japan, opening three stores in about one year.

Roberto Santibanez
Roberto Santibanez is the owner and chef of three Mexican restaurants, FONDA, in Manhattan and Brooklyn, and also consults for numerous restaurants, including Mi Vida in Washington DC. Born in Mexico City, Chef Santibanez graduated with honors from the elite Le Cordon Bleu culinary school in Paris. He then helped open three restaurants in Mexico City, and served as executive chef at Fonda San Miguel in Austin, Texas, for four years. He then served as executive chef at Rosa Mexicano, a famous restaurant with locations across the US, including Las Vegas, Boston, and Disney World, for five years, before opening his own restaurant, FONDA. His Mexican cuisine, which is modern yet respectful of tradition and essence, continues to attract fans. His warm and sincere character has made him a huge hit on TV shows such as Good Morning America, and he is one of the top celebrity chefs in the US.
