Yakiuo Ishikawa, operated by Tsukiji Aozora Co., Ltd., will open Yakiuo Ishikawa Ginza Rinkaro on the 12th floor of the Ginza Mitsukoshi New Building on Thursday, September 25, 2025. This will be the restaurant's sixth store, following its Tsukiji flagship store, Roppongi, Nagoya, Hakata, and Saigon, Vietnam.
Yakiuo Ishikawa was founded in 2018, coinciding with the relocation of Tsukiji Market to Toyosu. Concerned about the future of the Tsukiji Outer Market, which was left behind by the relocation, CEO Ishikawa conceived the idea of "no-meat yakiniku" after seven years of planning in order to bring attention back to Tsukiji. Fish fresh enough to be eaten as sashimi is seared for just a few seconds and enjoyed like yakiniku. Using sushi techniques, the restaurant expresses the world of yakiniku using only fish, with otoro (fatty tuna) representing "special kalbi," chutoro (medium fatty tuna) representing "jo kalbi," and tiger pufferfish representing "salted tongue." This innovative style, which allows you to enjoy a fragrant and satisfying meal without using any meat, has been well-received by many customers and is garnering attention as a new food culture.
The newly opened Ginza Rinkaro is the second Rinkaro store, following the one in Roppongi. All seating is counter-style, and the chef will grill each slice to the perfect temperature right in front of you, bringing out the fish's full flavor while creating a lively atmosphere. With a modern Japanese interior design, high-quality tableware, and relaxed service, the restaurant offers a perfect experience for special occasions such as business meetings and anniversaries. The restaurant's parent company, Tsukiji Aozora Co., Ltd., operates a total of seven stores, including the sushi restaurant Tsukiji Aozora Sandaime. With the discerning eye cultivated in Tsukiji, the restaurant offers only the best cuts of tuna for grilling, such as wild southern bluefin tuna, wild tiger pufferfish, and blackthroat seaperch.
