DOLCE TACUBO’s new store will open in Ginza on Thursday, June 18, 2026.

The Ginza store has a new matcha flavor in its revamped "Doltak Soft" gelato line. The baked goods lineup is also extensive.

DOLCE TACUBO, a patisserie operated by Soignier Co., Ltd., will open its third store, DOLCE TACUBO GINZA, in Ginza on Thursday, June 18, 2026. The Ginza store will feature eight types of gelato as its signature menu items, as well as a wide selection of baked goods. In addition, the popular soft serve ice cream will be rebranded as "Dolce Tacubo Soft" and will be available at all stores.

• About DOLCE TACUBO

"DOLCE TACUBO" is a patisserie opened in 2021 by "TACUBO," an Italian restaurant in Daikanyama that is notoriously difficult to get a reservation at. It was created as a take-out only shop in response to requests from customers who wanted to take home the financiers and gelato that were served as the final dessert at the end of the course. In 2023, "DOLCE TACUBO Caffe," which became explosively popular for its soft serve ice cream, opened in Toranomon Hills Station Tower. This Ginza store is the brand's third location.
With the theme of "bringing the essence of a restaurant directly into desserts," TACUBO infuses its unique perspective and meticulous attention to detail into familiar, classic sweets that everyone can enjoy, transforming them into something truly special. We value bringing out the inherent charm of each ingredient through recipes and cooking methods that are perfectly suited to each individual item.

• New menu lineup

Expanding our ice cream dessert selection <br />In addition to our standard baked goods, we will be expanding our selection of ice cream desserts, including gelato and soft serve ice cream. We also plan to offer gelato for online sale in the future.

Gelato | Gelato <br />Gelato will be introduced as a signature menu item at the Ginza store. Until now, the Daikanyama store has always offered one flavor, changing it occasionally, but the Ginza store will always offer eight flavors. You can enjoy combinations that make the most of the ingredients, inspired by a restaurant that has received a Michelin star for seven consecutive years. Furthermore, for gelato that uses fresh fruit, we use high-quality fruit that can be eaten fresh, sourced from carefully selected producers all over Japan, a skill we have cultivated through our restaurant operations.

FLAVOR

  • Pistachio: Uses two types of paste: fragrant roasted pistachios and fresh pistachios. Topped with roasted pistachios and Maldon salt.
  • Plum: A gelato made with fresh plums pureed whole, including the skin, allowing you to enjoy the natural tartness of the fruit.
  • Pineapple Basil: Made with fresh pineapple and basil. A summery flavor that combines the sweetness and tartness of pineapple with the refreshing taste of basil.
  • Amarena: A vanilla base with egg yolks, mixed with syrup-soaked cherries and cookies—a truly Italian combination.
  • Yogurt Mango Passion: A tropical gelato made with a yogurt base mixed with mango and passion fruit sauce.
  • Marsala Raisin: Raisins soaked in Marsala wine are mixed into milk gelato.
  • Kawachi Bankan: Made with plenty of juice from Kawachi Bankan oranges from Iwagi Island. A gelato with a refreshing balance of tartness and bitterness.
  • Sage Stracciatella: A refreshing gelato with a milk base infused with the aroma of sage, accented with Minimal's bitter chocolate.

DOLCE TACUBO Soft Serve | Doltac Soft <br />Milk 1,000 yen / Matcha 1,200 yen / Mixed 1,300 yen

Made with an Italian Carpigiani soft-serve ice cream machine, this soft-serve ice cream offers a "new sensation" with its fluffy, smooth texture and clean sweetness. We have repeatedly refined the process, including adjusting the amount of air, to achieve this fluffy texture.
To coincide with this opening, we've revamped our classic milk flavor. By switching to the highest quality "crème soignée" for the fresh cream, we've pursued a richer taste while retaining the refreshing aftertaste that Takubo, who dislikes milk, insisted on. Also, we're introducing a matcha flavor for the first time. While cherishing the flavor of matcha, we've focused on creating a taste that you can enjoy to the last bite without getting tired of it.

New baked goods lineup <br />To coincide with the opening of the Ginza store, we will be expanding our selection of financiers and puddings.
Chocolate financiers and hazelnut financiers, previously only available seasonally, have been added, meaning there will always be three types of financiers available. A "white pudding" will also be introduced, and you can purchase both as a set. Other items, such as Baumkuchen, are also planned for development in the future.

  • Chocolate (600 yen): A financier made with Minimal chocolate, offering a rich cocoa aroma and a hint of bitterness. Baked with honey for a moist and rich texture.
  • Hazelnut (600 yen): A financier that generously uses hazelnut powder and paste, allowing you to fully enjoy the flavor of hazelnuts. Topped with roasted hazelnuts.

White pudding:
This smooth pudding, made with crème soignée, has a texture somewhere between jelly and pudding. It has a rich milky body, yet a clean aftertaste.
This drink uses fresh passion fruit from Okinawa Prefecture, offering a delightful balance of tartness and aroma. The fruits used in this drink will change seasonally.
