Carnevale Co., Ltd. will open "Beef Sushi Kintan," a one-of-a-kind beef sushi specialty store that combines beef and seasonal seafood, for a limited time at the GINZA Stage on the second basement floor of the Ginza Mitsukoshi Main Building from Wednesday, November 13th to Tuesday, November 19th, 2024. During the period, Beef Sushi Kintan's sushi chefs will prepare freshly made sushi in the live kitchen attached to the event venue.

[What is Ginza Kintan's beef sushi?]

Ginza Kintan is a beef sushi restaurant that combines Edomae sushi with the parts and flavors of raw meat, meat cooking methods and know-how that have been accumulated over the 12 years since the restaurant opened. This time, to coincide with the opening of a store at Ginza Mitsukoshi, we have low-temperature cooked the beef sushi so that you can enjoy a texture closer to raw meat, and combined it with seasonal seafood. We offer exquisite beef sushi, including "marinated and seared Wagyu Zabuton" and "seared Hida beef skirt steak nigiri." We propose completely new sushi, born from the creativity of sushi chefs and meat chefs, such as "beef tongue eel nigiri" and "Sendai beef shoulder loin and boiled conger eel battera." In addition, Ginza Kintan's specialty "Wagyu Yukhoe-style and Hokkaido Sea Urchin Dog," which is topped with Wagyu Zabuton mousse and plenty of Hokkaido sea urchin, is served in a tiered style. Take this opportunity to enjoy the exquisite beef sushi that you would never be able to enjoy at home.

This is a juicy inari sushi made with wagyu beef offal kopchan and squid tentacles cooked in a sweet and spicy sauce, as well as a yakiniku restaurant's inari sushi with the crunchy texture of beef cartilage urte and squid tentacles.

A5 Sendai beef loin is simmered in sukiyaki sauce to condense the flavor, then combined with stewed conger eel to make pressed sushi. We use flavorful black rice with balsamic vinegar.

A5 Sendai beef loin sukiyaki. Enjoy it with eggs from local chickens from Iwate Prefecture. The rice is a blend of two types of domestic rice, finished with refreshing rice vinegar and apple vinegar.
