THE GREY ROOM in Ginza, operated by Transit Hospitality Management Co., Ltd., will reopen on Wednesday, September 10, 2025. Based on the concept of "spice mixology," the restaurant will offer mixology-style cocktails that go beyond simple flavor combinations using spices. Experience the profound depth of spices with just one sip.
■The concept is "spice mixology": a new cocktail experience that stimulates the five senses
"THE GREY ROOM" offers "spice mixology," which explores the possibilities of spices. Rather than simply adding flavors, we bring out the aroma and flavor of spices, offering a special experience where you can experience the story behind each cocktail with all five senses.
The most iconic of the four new signature cocktails is the dreamy "Meditation," with smoke pouring out of the masu. Based on the recipe of the classic Japanese cocktail "Bamboo," it combines saffron, cardamom, and passion fruit, and is enhanced with rosewater for a gorgeous aroma. The smoke rising from the popping bubbles will transport you to a meditative moment where tranquility and exhilaration coexist.
We also offer a variety of original cocktails, each crafted with a unique concept and presentation, using a variety of Indian spices and distinctive spirits.

The food will be prepared by Tejas Sovani, executive chef of SPICE LAB TOKYO and THE GREY ROOM, who serves "modern Indian cuisine" that overturns the Japanese concept of "Indian food." Classic Indian street food, biryani, curry, and tandoor grill dishes have all been reimagined as bar food. Classic bar snacks and desserts have also been given an Indian spice culture twist. Guests can enjoy different food and cocktail pairings at different times of the day, from tea time to bar time.

Behind the velvet curtains lies a modern, open space. Inside, you'll be greeted by an art piece of an elephant, a symbol of India. The sophisticated design, based on gray, creates a free and relaxed atmosphere where adults can enjoy themselves naturally. The spacious interior truly embodies the new Ginza style. With a variety of seating options, including table seating, counter seating, an open terrace, and a casual standing area, it can accommodate any occasion, from relaxing alone to entertaining guests or large parties.
