■ "Tottori Okayama Shinbashikan" offers Okayama Prefecture's Ozoni, which uses yellowtail stock and dried squid as a secret ingredient, and Tottori Prefecture's Ozoni, which uses red bean broth
Tottori Okayama Shinbashikan serves ozoni from Okayama and Tottori prefectures.
In the southern part of Okayama Prefecture, which is close to the sea, yellowtail, a fish known for its growth, is used, while in the northern part, dried squid stock is used. This time, we made a zoni using kelp and yellowtail stock, with dried squid added as a secret ingredient.
Additionally, the most common style of ozoni in Tottori is to add softly boiled round rice cakes to azuki bean broth. Since ancient times, the red color of azuki beans has been believed to ward off evil spirits. Be sure to enjoy ozoni, which is packed with the charms of both Okayama and Tottori prefectures.
