Unagi no Eight is a new brand created by the popular Japanese restaurant Ajimi, which has a 28-year history in the crowded restaurant-filled area of Nakasu, Hakata, and where you can enjoy the six flavors of Japanese cuisine with a touch of humanity added to the five. It is a new genre of specialty eel restaurant that expresses the flavor of "unatoro," inspired by the bamboo steamed eel of the Chikugo region of Fukuoka, where Kawarabata Goji, the head chef of Ajimi, was born.
It opened in August 2023 and has been especially popular with tourists visiting Japan in recent years, with over 4,000 reviews and a rating of 4.9 on Google (as of April 2025).
The restaurant is known for its fluffy eel and dashi-maki broth, and the eel in particular is cooked using traditional Japanese cooking techniques to create a unique finish.
You can enjoy three different kinds of eel dishes: the [Seiro Mamushi Gozen], which has a soft, "unatoro" texture made using Japanese cuisine techniques; the [Hitsumamushi Gozen], which is grilled to a fragrant finish yet still has a soft texture; and the [Stone-grilled Eel and Beef Gozen], which offers a new way to eat eel with a fun performance.
We are pleased to announce that Unagi no Eight Ginza store will open in Ginza 7-chome on May 23, 2025.
This is the restaurant's first foray into the Kanto region, where you can enjoy a new style of eel cuisine that is popular in Fukuoka.
