What is Latina PARRILLA?

South American (Latina) Grill (PARRILLA)
It is a cooking method that originated in the Pampa region, which is the home of South American cowboys and gauchos and spreads across Argentina, Uruguay, and southern Brazil, and uses a wood-fired ember fire (a fire that is not blazing, but has a red-hot core).

The difference between firewood and charcoal

Compared to charcoal, it is more difficult to control the heat of firewood, but the heat hits the ingredients gently over the entire surface, so the surface is lightly grilled and the inside does not get hard. The moisture does not escape, so the meat juices spread softly in your mouth. We use oak firewood, which burns well and has a high heat capacity.

Latina PARRILLA's recommended dishes

Yoshizawa Livestock's carefully selected black beef rib roast and top sirloin are on the bone and are dry-aged (meat that has been dried as is). In addition, the carabineros (rare wild shrimp that live in the deep sea and have a rich roe) are grilled over a firewood fire, which enhances the flavor and gives them a luxurious taste. This is a dish that you should definitely try.

The chef's choice course (16,000 yen, for 2 or more people) includes luxurious ingredients such as Ossetra caviar and raw oysters from Ofunato, and you can choose your favorite meat from US prime skirt steak, Australian grass-fed tenderloin, or Yoshizawa Livestock's carefully selected Japanese black beef misuji . You can also add 5 types of wine pairings (6,000 yen) to the course. *A lunch course (4,800 yen) is also available.

We offer five types of wine pairings (6,000 yen) to go with the course. For bottled wine, we recommend Malbec (red), Argentina's representative variety. We recommend an Argentine wine made in Argentina by Paul Hobbs, the genius winemaker involved in the brewing of Opus One, which goes well with meat.
