You have training experience in France!
Okay. After studying abroad in France for a year from a Japanese cooking school and studying at a local cooking school for half a year, I spent the remaining half a year doing stage (training) at a restaurant. After returning to Japan, I worked at a French restaurant in Tokyo, and when the restaurant opened in August last year, I became involved in the launch of the restaurant and menu development as a store manager and chef.
Is French the main menu?
The base is French, but it's not just that. Try adding a Japanese taste, try using fruits in the main dish … I like sake myself, and we also have many types of sake and French side dishes that match it. I will. Anyway, I am thinking of a menu that I would like customers to choose as they like by preparing various things.

We have a variety of customers coming to our store, but since all seats are pet-friendly, many of our customers are taking a walk with their dogs. In addition, there are many sofas, and private rooms and semi-private rooms are also available, so it can be used slowly by those with babies and those who are in the family. Even though it is located in Ginza, you can enjoy your meal without stretching your shoulders in the interior using antique furniture, and I think that you can relax with casual customer service.

Since it is roasted over charcoal, excess fat is removed and women can enjoy it in a healthy way. Garnish with 3 or 4 kinds of seasonal vegetables. The sauce is refreshingly finished by adding kabosu to deglazing (taken from veal meat and bones). It also comes with black garlic puree, so you can add it to your liking.
