On Wednesday, December 17, 2025, Osho Co., Ltd. will open the Ginza branch of the authentic izakaya restaurant "O-Souhonke" in Ginza, Tokyo. Based on the concept of "commitment to skill and fish," O-Souhonke is an authentic seafood izakaya for adults, where skilled chefs use their skills to bring out the full flavor of fish. This sixth location marks a long-awaited opening in Ginza, a hub of fine cuisine and culture. The restaurant's greatest appeal lies in its overwhelming selection of fresh seafood, with over 40 varieties sourced daily from fishing ports across the country, and the skilled techniques of its chefs. In addition to sashimi and sushi, the restaurant also offers the perfect cooking method for each ingredient, including simmered, grilled, and fried dishes. Among the dishes is the Tosa specialty "Wara-yaki Bonito," a must-try, with the chef grilling the bonito over a spectacular flame right in front of you, and the rich aroma of smoke that enhances its powerful flavor. In addition, 24 types of sake are available, including limited editions carefully selected from breweries around the country. The staff will recommend the perfect bottle to pair with your meal, further enhancing the appeal of the fish dishes and providing an exceptional dining experience.

Among the many dishes at "Osakana Souhonke," the "Tosa Specialty: Straw-Grilled Bonito" (1,500 yen) is a must-try. The bonito used is line-caught off the eastern coast, a renowned luxury brand said to be the fattiest. The chefs use techniques they learned in Tosa (Kochi), the birthplace of straw-grilling, to create a spectacular grill. The sight of the chefs grilling the fish over a high flame on a grill surrounded by counter seats is a truly spectacular, lively performance. The concentrated umami of the fish combined with the aroma of smoked straw will leave you impressed with its deliciousness. Also available are the rare "Raw Tuna Straw-Grilled" (1,850 yen) and "Conger Eel Straw-Grilled" (1,400 yen).

Don't miss the "Seasonal Fish" menu, where you can order a whole, fresh, seasonal fish delivered that day (approximately 4,000-6,000 yen per fish). In winter, we recommend splendid red snapper and blackthroat seaperch. The fresh fish is sourced from fishing grounds and fishermen across the country by Yonekawa Suisan, a Toyosu wholesaler founded 89 years ago and a group company of ours. Because the fish is shipped directly from the market to our store without going through a processing plant, its freshness is guaranteed. We offer a variety of cooking methods that make the most of the ingredients, including sashimi and sushi, as well as simmered dishes, robatayaki, and tempura. Even if you have a specific order, such as "half simmered, half grilled, and boneless fish in miso soup," our chefs will be delighted to accommodate your request.

Sake is essential for delicate fish dishes that showcase the chef's skill. Another attraction of "O-Sakana Souhonke" is its wide selection of carefully selected sake from breweries across Japan. The lineup is sure to satisfy everyone, from those unfamiliar with sake, such as "Dassai," "Mutsu Hassen," and "Dewazakura," to connoisseurs, including "Daishichi," "Kakuei," "Kariho," and "Asahi." Our staff, well-versed in the art of sake, will consider the perfect pairing and suggest the perfect brand and perfect drinking style. (You can choose the amount of sake, starting from 480 yen for 90ml or 900 yen for 180ml.) Enjoying sake while learning about the brewery's passion for sake-making is also a delight. Sake is served in cedar sake cups. The aroma of the wood blends with the flavor of the sake, creating an even more pleasant experience.
